You remember those 8lbs of cherries from last week? Well that cherry pie was just one of the recipes created. Today I've got a refreshing dish that's perfect for summer. It's only got a few ingredients so it lets the sweet flavor of these beautiful cherries shine through.

Lemon Pudding Cakes with Raspberry Sauce

I love to use fresh lemons and limes but I rarely have them stocked in the fridge and since I cook so randomly, meaning I rarely plan ahead, when I need a lemon or lime it's never there. That leaves me a few options, but most are artificial and don't provide the pure lemon flavor you're looking for in a lemon centered dish.

Lime and Blackberry Italian Meringue Pie


One of the things I miss most about Seattle summers is being able to walk into our backyard or along any street and pick bucketfuls of the most beautiful blackberries you have ever seen. My memories of the scratches received while digging through the branches have faded somewhat but I can vividly remember the cobblers, pies and jams that we made each year. Now I have to hope Costco gets a good batch of decent berries and then pay an arm and a leg for a little container of them. For that reason I really don't use them much for anything.

I had some filet mignon left over from when I made Beef Wellington a few weeks ago and I wanted to make something a little different with it and I came across this salad from Bobby Flay. It just sounded good so I thought I'd give it a whirl.
