Emeril's One-Pot Blogger Party: Baked Eggs with Corned Beef Hash
We are definitely a breakfast for dinner kind of family. Of course, we have our Pancake Wednesday tradition but there are often multiple nights a week that we'll have scrambled eggs or other breakfast related dishes for our family dinner. For my next Emeril dish I actually let a friend flip through the book and choose a recipe that he thought I should make. He ended up choosing the Baked Eggs and Corned Beef Hash, and I have to admit I was a little disappointed at first. It just seemed too simple. Could it really be that good?

Baked Potatoes with Rib-Eye Steak Hash
I found this recipe a few years ago as I was browsing my Bon Appetit magazines and it's become one of my favorite's. It's a fun way to combine steak and potatoes and is fairly easy to put together making it a great weeknight meal that even the kids will enjoy.
