Danish Yeast Rolls
I'm not quite sure what makes this specific recipe "Danish" but it's essentially a cinnamon roll but the filling is only sugar and coconut. I really like coconut and so I was surprised I had never tried this combination before. When I came across it at Red Star Yeast, I knew it was one I wanted to try.

Curried Chicken Coconut Soup
Yeah, I know, it's not really soup season anymore but sometimes it's just good to make a great soup. I borrowed a friends pressure cooker awhile ago and I was having fun playing with a few different types of food. I haven't used a pressure cooker since I was in high school and even then I never really used it for much other than cooking artichokes.

Coconut and Lemon Curd Cupcakes
I don't throw around the "best" designation around very much. I like too many foods and always like trying a new take on something so I hardly ever say that anything is the best of whatever category it may be in. I think too many people just say something is the best, or want people to believe that whatever they made was the best so the recipe now becomes "Best whatever whatever". However, I do admit to adding "best" as as a search term when I'm looking for a new recipe online. Did I just contradict myself?

Coconut -Piloncillo Ice Cream with Coconut Tortilla Chips and Fruit Salsa
I mentioned last week that while I was shopping in the Thai grocery store that I found some beautiful mangoes. I had seen this recipe for ice cream with the fruit salsa that looked so good but usually mangoes are so expensive. When I saw these I couldn't resist.

Coconut-Vegetable Curry
This last week as I walked through the Minneapolis Farmer's market I decided to pick out some ingredients that I haven't used before or not recently at least. I ended up with leeks, thai eggplant, thai and cayenne peppers, beets, green beans, eggplant and zucchini. I knew it would require some more research to use some of these but I needed some new inspiration.
