Bacon Wrapped Pork Tenderloin with Apple and Sausage Filling

How quickly the time goes. I feel like we were just enjoying the last days of Summer and now here we are prepping for another Thanksgiving. We haven't had snow here yet so at least I can be Thankful for that. And good food. I've been surrounded by some amazing food the last week or so, from restaurants and friends to trying some new recipes in my own kitchen. It's so amazing to see what people with so much more talent than I have can do with some simple ingredients.

Chicken and Sausage Gumbo

I realize that this recipe is coming out a little too late if anyone was looking to make it for Mardi Gras this year, but it's worth having in your arsenal and it's something you could make any day of the year and be happy with.

When we lived in New Orleans we were introduced to many new foods. Many of them were traditional southern style dishes and I fell in love with the deep richness that so often accompanied the meals we tried. Gumbo was one of my favorites because the ingredients were fairly simple but there was so much depth to it.

Bacon Wrapped, Sausage Stuffed Jalapeno Peppers

The State Fair is over, school has started and it's already getting cooler. I'm going to reminisce though a bit with one of my favorite foods from the State Fair this year. I won't list everything I had this year, wait, sure I will: cheese curds, pina-colada, beef tongue taco, fried eggplant taco, chocolate chip cookies, puff pastry sausage, stuffed jalapenos, foot-long corn dog, mini donuts, poutine, red velvet funnel cake, fried green beans, strawberry smoothie and onion rings! Whew. Now, don't go thinking that was all in one visit. It was two. :)

Polish Sausage with Smothered Cabbage and Mashed Potatoes

It's buffalo week with Virtual Potluck! Ever cooked with buffalo meat or sausage? If you haven't you're going to have lots of recipes to try out now. Visit our host blog to see join in the potluck!

This buffalo came to us directly from The Buffalo Guys. The thing I liked most about the buffalo meat is that it's lower in cholesterol and fat than other comparable meats. These buffalo are happy guys out roaming free on the range and no fillers or other nasty stuff to get in the way. The flavor is great and we used all of them in a variety of ways. Hot dogs went into some Mac and Cheese for  the kids, Andouille sausage went into a Jambalaya and the Polish Sausage went in to the dish I'll share with you below.

Chicken and Smoked Sausage Gumbo

We moved to Mandeville, Louisiana (just outside of New Orleans) just a day before Hurricane Katrina hit in 2005. We were there for just a year but the experiences we had in helping to rebuild, the friendships we made and of course the food, will always be a part of us. So this month when the Daring Cooks announced the challenge was Gumbo, I was pretty excited. I had some great gumbo while we were in New Orleans but I've never tried to make it myself.

Yale University Dining 2nd Annual Chili Throwdown

On Friday, November 5th 2010, Yale University Dining hosted it's second annual "Chili Throwdown." 22 different chili's were entered into the competition, one of which was a recipe created by my Dad, an Associate Chaplain at Yale. He came out in third place, beating out all of the Yale Chefs and other organizations except for the Chef of Berkeley college, who won first prize and the Chef for Saybrook and Branford colleges who took second.
