Tuscan White Bean Soup

Today at lunch I went for a hot bowl of Tuscan White Bean Soup from the cafeteria at work. Our cafeteria went through a remodel last year and actually serves some pretty decent food. The soups have always been great but this one was extremely underwhelming. Not necessarily bad but really not good in any way. I even had to go get a big side of onion rings to make up for it.

Peppermint Eggnog

We have a tradition in our house that we have to buy eggnog the first time that we see it in stores every year. It usually ends up coming out around Thanksgiving now and it's a fun way to kick off the holiday season.

Nuts About Oats

I'm so excited to announce my participation in the Nuts About Oats Contest sponsored by Peanut Butter & Co. and Bob's Red Mill!

I was one of six bloggers asked to create a breakfast recipe using peanut butter and oats. It took me about 2.5 seconds to figure out what I wanted to make. I grew up with my my Mom making these amazing cranberry cream scones and I knew I could easily integrate some peanut butter and oats into them and make them even better.

Gingerbread Truffles

Looking for a great homemade gift to wrap up and give to friends and family? Or do you need something fun and different to bring to your work Christmas party? These truffles are amazing and the flavor is perfect for this time of year. The inside of the truffle has chewy candied ginger in them and the cream has been steeped with ginger, allspice and fresh cloves so it has the perfect holiday spice.

Sweet Corn Ice Cream

I'm really not on a mission to come up with obscure ice cream flavors, really, I promise. They are just presented to me and I have an obligation to make sure they are known to the world. This year we took the family to the Minnesota State Fair. On a Saturday. The first Saturday of the Fair. Not the best idea. I don't usually mind big crowds of people, and it wasn't so much a people issue, it was just that there were SO many people. Throw in a double wide stroller and it took us almost 45 minutes to meet up with some friends just down the main street. We honestly didn't get anything done in the 4.5 hours that we were there except the farmhands activity for the kids, grabbed some food and watched a few minutes of a dog show. For someone who likes to spend his time efficiently, I left somewhat frustrated. The only saving grace was the ice cream. One bowl shared between the family. It was Sweet Corn Ice Cream and I've been dreaming of it since we left.
