Emeril's One-Pot Blogger Party: Baked Eggs with Corned Beef Hash
We are definitely a breakfast for dinner kind of family. Of course, we have our Pancake Wednesday tradition but there are often multiple nights a week that we'll have scrambled eggs or other breakfast related dishes for our family dinner. For my next Emeril dish I actually let a friend flip through the book and choose a recipe that he thought I should make. He ended up choosing the Baked Eggs and Corned Beef Hash, and I have to admit I was a little disappointed at first. It just seemed too simple. Could it really be that good?
Turns out the answer is a resounding yes. It's not often that I'll make a dish twice in a row, but we had our friends over on Saturday night when we cooked it the first time and then after church on Sunday it was sounding so good again that I made a whole new batch! As simple as the recipe seems it packs a punch of flavor and really, how could I doubt the power of corned beef?
On Saturday, we had our friends come over and instead of having it all ready and just sitting down to eat, we all helped prep the entire dish and then enjoyed the meal together. I cooked the corned beef earlier in the day as that does take a couple of hours, but then we all sat around our island chopping veggies and having a great time. THIS is why I love to cook. Spending time with friends and family and then having something amazing to eat together afterwards.
The dish is put together by sauteing some diced and blanched potatoes in butter and oil. You let them sit without stirring for 8 minutes so they have a beautiful crispy skin before adding in the other ingredients. Onions, peppers and corned beef are added and then finally, you create wells and crack four eggs in before putting it in the oven to finish off for a few minutes. Now of course the recipe called for just regular eggs but I just had to go a bit further and we added four beautiful duck eggs I had just picked up that morning from a fellow food blogger whose uncle has a local duck farm. They raised an almost perfect dish to the next realm.
Just one other change aside from the duck eggs to Emeril's recipe included cutting down the onions. It calls for 4 cups and after I started adding them in, it just seemed like too much, so I cut it down to around 3 cups.
