Emeril's One-Pot Blogger Party: Chicken Pot Pie with A Biscuit Top
I got to talk to Emeril! Yeah, Emeril Lagasse himself. He was doing a radio show on XM to promote his Sizzling Skillets Cookbook and I called in and got to tell him about some of the dishes I've been making the past two weeks. It was pretty cool. So of course I had to come home and make something new from Sizzling Skillets!
Tonight we put together the Chicken Pot Pie. Slightly different than your typical pot pie, this one starts out and finishes in a cast-iron skillet. That is, if you have a cast-iron skillet. I don't. So instead I used my ceramic dutch oven and I think it worked out just fine. The chicken is browned and then removed. Mushrooms are then caramelized and then mixed with carrots, celery and onions. I added some sliced leek just to mix it up a bit. Chicken stock, potatoes and peas are added to make a thick and hearty base.
Instead of being baked in a pie crust, homemade buttermilk biscuits are placed around the top and then baked until brown and fluffy. The biscuit recipe includes tarragon but I had some fresh sage I had on hand so I chopped up that and mixed it in instead.
For only having some fairly simply herbs and spices the complexity of the final dish is pretty intense. It was a little more soupy than I would have expected but it still worked as it allowed you to pour some extra filling over the biscuits.

This looks like the perfect comfort meal!
ReplyDeleteBiscuits on top is such an interesting idea. I was tempted to make this one. But then again, I was tempted by a lot of the recipes.
ReplyDeleteThis reminds me of the pot pie my mom made growing up - hers was always a bit soupy, but I loved it. I really like the idea of sage in the biscuits.
