Emeril's One-Pot Blogger Party: Leek and Bacon Quiche in a Potato Crust


This Emeril Blogger Party is winding down but it's not over yet! After this post I'll have one more dish to share. I'm making it tomorrow and it's something that I've never tried cooking before! Stay tuned.

One of my favorite things to make is quiche. There are so many variations and they pretty much always turn out delicious. I've never quite made it like Emeril though. Instead of the pastry crust that I typically use, this recipe has you grate potato's, mix them together with some egg and spices and then press it into the bottom of a spring form pan. It's partially baked before the rest of the filling is added.




The filling is a combination of eggs of course, cream, sour cream, caramelized leeks, cheese and thyme. Did I forget bacon? Yeah, there's bacon. I don't think you're allowed to make quiche without bacon, right? It's then all baked until just barely set. I loved the flavor of the leeks and the potato crust was a fun addition I think I'll use again.

  1. That potato crust is a genius idea. So many people are pastry-phobic. I think I need to borrow the idea for some other recipes.

  2. Always i follow Thymeinourkitchen and i get most of information about kitchen cookware. Quiche is delicious food and i also try sometimes.Once upon a time i make this cake with greenlife cookware.

  6. Thanks for your excellent post. Although I am not a good cooker but I will try this next weekend. Would you please give me a suggestion which indoor grill pan is appropriate for a single man. I am eagerly waiting for your respond.
