I don't like the idea of veggie burgers more for the reason that people are typically trying to use them as a substitute for a real meat burger. And there is no substitute. Period. But if instead you just want to have a really good sandwich and it happens to not have any meat in it, I'm all for that. And honestly with these Wild Rice and Hummus "burgers" I'm OK with them not having any meat. I almost topped them with some bacon though. And that would have made them just that much better.
It's National Hummus day and since the days are getting nicer, I wanted to create something reminiscent of the beautiful and warm summer to come. Instead of just smearing some hummus on a bun I actually mixed the hummus into the patties so you'd get that flavor all the way through. I used one of my new favorites from Sabra, the Basil Pesto Hummus. I actually added no other spices to the mixture and yet they were so flavorful. The nuttiness of the wild rice is a perfect compliment to the basil and the texture was spot on. The burgers brown up nicely and served with a pretzel roll makes it complete. You can play around with any of Sabra's other flavors as well to create your own!
I was also playing around with tomatoes from +Red Gold Tomatoes and created a garlic aioli that was drizzled over the top.

Wild Rice and Hummus Burger
Ingredients
3 large eggs
1/2 cup Sabra Basil Pesto Hummus (or flavor of your choice)
1 1/2 cups cooked wild rice
1 cup grated sharp cheddar cheese
1 1/2 cups panko bread crumbs
Directions
Whisk together the eggs and hummus until smooth. Stir in the rice and cheese and then gently fold in the bread crumbs.
Form the mixture into patties about 1/2 inch thick and your desired width. You can make smaller sliders or larger patties for hamburger buns. You can freeze the patties for 30-60 minutes at this point and it will help them stay together better when you cook them.
Heat a cast iron griddle over medium high heat and brush with olive oil. Cook patties on the griddle until deep golden brown, approximately 4-5 minutes each side.
