Fruit Pizza


For Mother's Day, my wife requested fresh fruit. Lot's of it. So we had crepes filled with strawberries and blueberries for breakfast and flank steak with grilled pineapple for dinner. Then for dessert we had the beauty pictured above; Fruit Pizza.


It's a pretty simple creation and you can really take it any number of ways. You take sugar cookie dough and press it into a pizza pan. Bake and cool it and then spread it with sweetened cream cheese. Then take whatever fruit you desire and create a dessert that tastes amazing and is a perfect showcase for the beginning of fresh fruit season.

Fruit Pizza

Ingredients
1 batch of your favorite sugar cookie dough, or if you're desperate, a package of refrigerated cookie dough
Variety of fresh fruit, sliced. Try strawberries, blueberries, mandarin oranges, raspberries, kiwi and banana's (dipped in lemon juice).

Filling:
8 oz cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla

Glaze:
1/2 cup sugar
2 tablespoons cornstarch
1 cup unsweetened pineapple juice
1 teaspoon lemon juice

Directions

Spread cookie dough onto a pizza pan and cook at 375 degrees for 12-15 minutes or until lightly browned. Let cool completely.

Cream together the cream cheese and sugar until light and fluffy. Mix in vanilla. Spread mixture across the cooled cookie.

Arrange sliced fruit on top of the cream cheese.

For glaze, in a small saucepan, combine sugar and cornstarch. Stir in pineapple juice and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Brush over fruit.

  2. Pizza is one of my favorite, specially on dinner time. It is a full meal. But this one is different I will try it soon.
